Cinnamon Shake

I am not the kind of girl who skips meals. I’m not one of those people who “forgets” to eat. Now that I’m in the business of WW, it’s pretty imperative that I don’t skip or skimp on meals. However, today was wicked busy. In fact, this whole week has been busy, and this may be why I’ve been so successful with WW this week. Three days this week, I didn’t finish my breakfast smoothie until 11 just because I would get so busy I wouldn’t even have time to drink my breakfast — let that process for a moment.

Today I worked solidly through my office hour and lunch time and as soon as my last class got out, I had to go get my taxes done. I didn’t feel hungry in my belly, but I was feeling lightheaded and knew I had to get home and eat. Plus, I’ve further injured my right arm and need to take some Advil… which I can’t take without food lest my stomach resemble Swiss cheese.

By the time I got home, I was craving ice cream, which is weird. I haven’t been craving sweets this week except for the lemon bar episode. I figure the ice cream craving is due to a lack of fat in my diet lately and just being extremely hungry.

The lunch I packed was no longer appealing by the time I got home at four, and I was thinking about Ben and Jerry’s Cinnamon Roll ice cream as well as their Creme Brulee ice cream, not in an “oh my God I want it now now” way but in an “huh, I wish I could have that in a less rich fashion” kind of way. I had some *cashew cream (admittedly more like a cashew ricotta due to last night’s rush to get my dinner done), and figured I could work something out.

*A note on cashew cream: soak raw cashews overnight in cold water or bring them to a boil and then let them sit overnight. Drain, rinse, and blend with enough water to cover. Do a better job than I did… I added too much water and didn’t obliterate them enough. However, a few tablespoons of this cream mixed with some canned crushed tomatoes, basil, a tiny bit of olive oil, and some sauteed onion, a rough cream gives a mouthfeel similar to ricotta. As an added bonus, I discovered that the cream thickens overnight. Score.

It ain’t Ben and Jerry’s — I don’t expect you are that much of a fool. But, if you want a refreshing, naturally sweet, creamy beverage, this will hit the spot. I’ll post my PB&Chocolate version soon, but I bet you’re smart enough to figure it out yourself. :-)

Cinnamon Shake

This would be thicker and more concentrated with a frozen banana, but I was quite happy with it as is. Makes about 24 ounces. Share, or knock it off yourself. According to the recipe builder on the WW site, this is 9 points. However, according to actual point values (which I am following at the instruction of WW veterans), it’s 5.

1 banana, peeled, preferably frozen but ok at room temp

Cream from about 1/8 c. of cashews (2-3 tablespoons)

dash of vanilla extract

1/4 tsp. ground cinnamon (I like cinnamon and I’ve had mine awhile so it’s not at its strongest… you may want to chill out on this)

4 pitted dates soaked in hot water a few moments to soften, then drained and torn up

1 c. unsweetened vanilla almond milk

two handfuls ice

Blend! Serve in glass or mason jar. Some date bits will sink to the bottom unless you are more patient than I am.
